I could never go on a carb-free diet.  I love potatoes too much.  I love pasta too much. And I definitely love bread too much.

Every day for breakfast I have 2 eggs fresh from our feathered ladies, some avocado, hot sauce, and a slice of this bread.  It’s so good and so easy to make – only takes about 5 active minutes and only 4 ingredients (though you can add more if you’d like)!

First you need to collect your ingredients, you will need:

  • A large mixing bowl
  • Something to mix with, I use a Danish Dough Hand Wisk
  • Measuring cup and teaspoon
  • Dutch oven
  • 3 cups flour – you can use any kind of flour or mix of flours that you’d like.  My favorite is 1/2 bread flour and 1/2 whole wheat
  • 1 teaspoon sea salt
  • 1 teaspoon active dry yeast
  • 1.5 cups of warm tap water (amount varies)

First add your dry ingredients (3 cups of flour, 1 teaspoon of sea salt and 1 teaspoon of active dry yeast) into your mixing bowl.

Mix them up until blended:

Add around 1.5 cups of warm tap water.  I usually put in 1.3 cups or so first, mix it up, then add more water until I get the consistency that I need, it’s usually between 1.5-1.75 cups depending on the flour I am using.  It should look like this:

Once you get the consistency right (and it’s doesn’t have to be PERFECT), cover it with towels or those beeswax/fabric sheets and leave it in a warm place for 8 hours or overnight until it has risen.

At this point you want to preheat your oven to 425 degrees F, WITH your dutch oven in it, so it preheats also.  At the same time, pull your dough out from the bowl (with floured hands) and set it onto a floured surface.

This is a good time to add extras, by sprinkling them on top.  My favorite way to make this bread is to add chia seeds, poppyseeds, and hemp seeds to the top, but you can also add herbs, garlic, etc…

Let the oven with the Dutch oven in it preheat and let the dough sit for 30 minutes.

After 30 minutes, pull out the Dutch oven, put your bread inside, put the cover on, and put back into the oven.  Bake for 30 mins at 425 degrees.  Take off lid and cook another 10 minutes (or so, check on it about 7 minutes in).  Pull bread out and put on a cooling rack, let cool at least 20 mins before slicing into it.  Enjoy!!!
